Eating on a NOLS course doesn't have to be dehydrated and boring. This video shows how it is possible to make a fresh Bluebell salad in the Alaskan back-country. The recipe includes: picked bluebells, carrots, grapenuts, and a vinaigrette. There are even more wild plants you can harvest on a course so keep your eyes open and your food fresh.

One of our former banknotes featured a picture of a cricket match at Dingley Dell. Well, there really is a Dingley Dell, but it's more famous for its bluebell wood, which is a breath-taking sight in April each year. With trusty video camera in hand, I went to record the event.

Every May, bluebells creep into Wivenhoe Woods and cover the ground. They are like small, shy dithering blue eyes, staring at their quiet admirers. Drinking an eyeful of blue bell in this cool surrounding is a bliss.
